Sterlet caviar is loved for its boutique-sized pearls, smooth texture, and bright, nutty finish, while its meat is light and versatile in fine cuisine.

 Native to freshwater rivers throughout Eurasia, the Sterlet is easily recognized by its elongated snout, fringed barbels, and rows of bony scutes. At Sturgeon Aquafarms in Florida, Sterlet are carefully raised under conservation programs, making them the only live specimens in the United States. The farm’s stewardship ensures this ancient species can be enjoyed without threatening wild populations.
