Founded in 2001 in Bascom, Florida, Sturgeon Aquafarms began with a simple goal: to cultivate sturgeon species sustainably and reduce the pressure on wild populations. From the beginning, we believed America could become a responsible home for Beluga sturgeon — preserving a centuries-old tradition while helping protect the species for future generations.
Sturgeon Aquafarms (SAF) was founded with a mission to develop sustainable aquaculture practices and contribute to global conservation efforts by responsibly farming sturgeon in the United States.
Between 2003 and 2005, we legally imported live sturgeon broodstock — including Beluga (Huso huso), Sevruga (Acipenser stellatus), and Sterlet (Acipenser ruthenus) — under CITES permits. This early investment helped lay the groundwork for a future of Beluga caviar production in America just before international trade restrictions tightened.
Following the U.S. ban on Beluga imports, SAF remained quietly committed to its work. Having secured broodstock beforehand, we were able to continue efforts to protect and sustainably cultivate Beluga sturgeon within the U.S., supporting conservation at a critical time.
Today, our 120-acre farm in Northwest Florida cultivates five sturgeon species, including Beluga, Osetra, Sevruga, Siberian, and Sterlet. Through steady stewardship, we continue to balance the craft of traditional caviar production with a deep respect for conservation.
