Beluga (Huso huso) Sturgeon

The Beluga (Huso huso) is the largest and most iconic sturgeon species, native to the Caspian Sea. At Sturgeon Aquafarms in Florida, purebred Beluga are sustainably raised from authentic Caspian broodstock under strict conservation practices. With farming permitted under U.S. Fish & Wildlife Service, the farm ensures the preservation of this ancient species while offering its unmatched caviar and meat to select customers.

Species Characteristics

  • Wild Range: Azerbaijan, Bulgaria, Georgia, Iran, Kazakhstan, Moldova, Romania, Russia, Serbia, and Turkey

  • Habitat: Anadromous — migrates from saltwater seas to freshwater rivers for spawning

  • Adult Length: 6–15 ft (1.8–4.6 m)

  • Adult Weight: 140–350 lbs (64–159 kg)

  • Meat Texture: Firm, dense, and slightly flaky

  • Meat Flavor: Rich, buttery, and delicate with a mild sweetness
